Mother’s Day inspiration, home styling and a family friendly recipe

With Mother’s Day approaching, we sat down with Cassie (@ourcoastalhaven_ on Instagram), an inspiring Coral Homes customer and of course, mother of two boys. As Instagram’s coastal home styling connoisseur, Cassie has given us some Mother’s Day home inspiration, the best kid-friendly recipe and explains her favourite features of her stunning Santorini 29 Coral home.

What Coral Homes design is your home and what is your favourite feature that you and your family love?

“Our home is the Santorini 29 design with the Seville façade. When my family and I entered one of the Santorini Coral display homes, we knew this was the home for us! The open plan living of this design makes for a seamless and calming flow from one space to another.

We love the multiple living zones and as a family of four it was important we included an open playroom situated near the main living space, that wasn’t secluded to a bedroom for the boys to play.”

What is your favourite family recipe to cook in your stunning Coral kitchen? If it’s not ‘top secret’, can you share the recipe with us?

“My son, Jax, loves to cook, so we are constantly in the kitchen creating many easy child-friendly recipes. One we made this week is our peanut butter and dark chocolate slice!”

Here’s the recipe to try for yourself:

Ingredients:

  • 2 cups desiccated coconut
  • 250g natural chunky/smooth peanut butter
  • 2 tbsp raw honey
  • 1 tsp vanilla essence
  • 200g 85% dark chocolate (Topping)

Method:

  1. Pre-line a slice tin with baking paper
  2. In a small pot, combine peanut butter, honey and vanilla essence. Heat over low to medium heat and mix until melted and combined.
  3. Add coconut into the peanut butter mixture and combine, spoon mixture into pre lined tray. Firmly press the mixture down evenly and set aside.
  4. In a double boiler, add dark chocolate and mix until melted. Drizzle melted chocolate over slice and place into the fridge for 2-3 hours or until hardened.
  5. Cut into 12 squares and eat immediately!

What’s your #1 tip for cooking with kids? How do you keep them interested?

“My number one tip for cooking with children is to make it simple and fun! Jax always picks the recipe he wants to cook and we make it an adventure.

From finding the ingredients at the supermarket, to gathering the utensils we need, helping to crack the eggs, stirring the mixture and of course licking the bowl – it’s all about having fun and creating memories together!”

Do you and your family have any Mother’s Day home traditions?

“We wake up bright and early on Mother’s Day and my husband and I enjoy a coffee together in bed and watch the sunrise whilst waiting for the boys to wake. Once the boys wake up, they cook a delicious breakfast of their choosing and we have a family picnic on the grass in our outdoor space!”
